Chicken & pesto pasta for kids

  • 300g pasta (any kind is fine, but fusilli works well)

  • 200g pesto (1x jar)

  • 200g cooked chicken

  • parmesan (to serve - optional)

  1. Cook the pasta according to the packet instructions

  2. Once the pasta is cooked drain well

  3. Now put the pasta back in the pan and add the pesto - stir over a gentle heat

  4. Now divide the pesto pasta between four bowls

  5. Top each portion with some cooked chicken

  6. Serve with grated parmesan (optional)

This is such a quick and easy recipe to make for your kids at the end of a long day. It also makes a perfect base for whatever veg is in your fridge or freezer. You can serve it cold for a tasty pasta salad lunchbox filler the next day, too.
