100g white fish (boneless)
2 eggs, beaten
225g breadcrumbs
2 tbsp sunflower oil
Preheat the oven to 200'C/400'F/Gas mark 6
Cut the fish into thin strips and dip in the beaten egg and then the breadcrumbs
Arrange on a non stick baking sheet that has had a light coating of sunflower oil
Bake in a medium oven for 12-15 minutes until the fish is cooked through and the coating is golden
Great served with homemade potato wedges (pop these in 30 minutes before and drizzle them with oil)
Tips
Kids will love helping you crumble slices of bread into breadcrumbs, plus coating the fish with the egg and breadcrumbs.
Why not avoid expensive fish like cod or haddock and try a cheaper, sustainable fish for a change such as pollock or coley - once it's covered in breadcrumbs no-one in your family will have a clue! Fresh wet fish counters at supermarkets often discount heavily later in the day and fresh fish freezes well. This recipe makes 4-6 fish fingers, simply increase the ingredients if you want to make more.
