Homemade chicken nuggets
A simple recipe for making chicken nuggets or goujons at home. Much tastier than the shop-bought variety...

500g chicken breast (or fish fillets)
4 tbsp plain flour
2 eggs, beaten
300g breadcrumbs
olive oil
Preheat oven to 190'C/gas mark 5
Cut uncooked chicken breasts into pieces (either strips for chicken fingers or chunks for chicken nuggets)
Dip the chicken into flour, then into beaten eggs and finally into breadcrumbs - this can be fun if you set up a conveyor belt system and have your children helping
Brush with a little oil and cook under the grill for 10-15 mins or bake in the oven for 15-20 mins, turning halfway through
Serve with jacket potatoes and veg

Tips
Make breadcrumbs by putting day-old bread in a blender or buy ready-made breadcrumbs from the supermarket
You can make a big batch of these chicken nuggets and freeze (uncooked) what you don't need on the day as an easy 'fast food' option for another day. Only freeze it if the chicken wasn't frozen before - never re-freeze defrosted chicken. Cook from frozen and add around 5 extra minutes to the cooking times above, or defrost before cooking.
Variations
Substitute the chicken for cod, haddock or salmon fillet and make fish fingers/nuggets
Make this dish healthier by adding any type of chopped seeds (hemp, sunflower or pine kernels) to the breadcrumb mixture - this gives it a nice nutty flavour, a bit of crunchiness and adds omega oils

My eldest daughter and her dad also thought they needed a bit of flavor as a little bland so my husband added some Italian garlic herbs to a few more and I could taste the difference and very nice. Debating marinading the chicken before cutting next time to give more flavor.

★★★★☆Instead of flour, eggs and breadcrumbs, we use cornflakes and black pepper in our house. You can also make the nuggets more "grown up" by adding chilli flakes to the mix, to taste. I blitz these bits up in a food processor or just bash the cornflakes in a freezer bag with the rolling pin. As we buy our chicken breasts in bulk and freeze them, when they are defrosted, the juices from the chicken work as a binding agent so no need for the flour and egg

★★★★★I use the coffee grinder to make the breadcrumbs. I season the flour with salt / pepper and once tossed in flour, egg, breadcrumbs, I then fry to brown and then place in the oven on a baking tray lined with greaseproof paper and bake at 180. I normally make two batches and leave one batch raw and freeze (fresh bought chicken as you advised!). Also you can make meatballs - beef mince, some of the left over breadcrumbs, an egg, garlic, basil and a red onion all blitzed in a food processor.

I used 700g of chicken and found that was enough for all 4 of us (2 adults 2 children) but needed much less breadcrumbs than the recipe called for. They were really moist. Think I will maybe add a bit of seasoning such as paprika, for the adults. I won't be buying ready made from the shop again!
