Toddler potato topped tuna pie

For the filling
½ tsp unsalted butter
mustard powder (a pinch)
1 tbsp single cream
50ml whole milk
50g cheddar cheese, grated
fresh parsley (a pinch), chopped
20g sweetcorn kernels
1 tsp cornflour
160g tuna flakes (1x tin)
For the topping
1 potato (large, peeled), chopped
1 tbsp single cream
white pepper (to taste)
For the filling
Add butter and finely chopped onions to the saucepan and cover with water and cook until tender
Add mustard powder, single cream, whole milk and stir
Add grated cheddar cheese, parsley and sweetcorn to the sauce
Mix cornflour with a splash of cold water and add to the saucepan whilst stirring
Add the tuna flakes to the sauce and cook for min 10 minutes
For the topping
Cook cubes of peeled potato in boiling water until soft
Mash potato with a spoonful of single cream and pepper
Finally place mash potato on top of tuna sauce and place in oven at 180C/Gas 4 for 10 minutes for a crispy top
