Mexican lasagne - My Daddy Cooks

A twist on two classic dishes - chilli con carne & lasagne - a big winner every time...

  • olive oil

  • 1 onion (or grated), finely chopped

  • garlic (3x cloves), finely chopped

  • 1 tbsp cumin, ground

  • 1 tbsp oregano, dried

  • 1 tsp coriander, ground

  • 1 cinnamon stick

  • cayenne pepper (optional)

  • cocoa powder (a good pinch)

  • 500g beef mince

  • 400g tomatoes (1x tin), chopped

  • salt (to taste)

  • fresh ground black pepper (to taste)

  • 9 plain flour tortillas

  • 6 spring onions (cut diagonally into 2cm long pieces)

  • 300g crème fraîche (half-fat is fine, approximately 1x tub)

  • 50g cheddar cheese, grated

  1. Preheat your oven to 180'C/350'F/Gas mark 4

  2. Pour a glug of olive oil into a frying pan on a medium heat and fry the onion for 4-5 minutes

  3. Add the garlic, fry for a further minute and then add all the herbs and spices and the cocoa

  4. Stir in the beef and cook for a few minutes - keep mixing it so the mince breaks up

  5. Pour in the tomatoes, season with salt and pepper, bring to the boil then turn down the heat and leave to simmer for 10 minutes

  6. If it looks like it is getting too dry, add a little water

  7. Layer two tortillas in the base of the tin, tear a third tortilla to fill in the gaps, pour over a third of the sauce

  8. Layer more tortillas, another third of the sauce, repeat, top with one last tortilla, spring onions, a layer of creme fraiche and cheese

  9. Bake for 20 minutes
