Painted biscuits

100g butter, softened
100g caster sugar
1 egg (plus 1 or 2 extra egg yolks), beaten
1 tsp vanilla essence
225g plain flour
food colourings
Preheat oven to 200'C/Gas mark 6
Cream butter and sugar until light and fluffy
Beat in the whole egg and vanilla essence
Fold in the flour and mix until you have a smooth dough
Chill the dough for an hour or so, before rolling out on a floured surface
Cut into shapes with cookie cutters
Beat the extra egg yolks and put a little yolk in 3 or 4 small bowls or cups
Add a few drops of food colouring to each bowl/cup
Paint each biscuit with a little of the egg mixture (using a clean paint brush or pastry brush), so that you have a few biscuits of each colour
Place onto a greased baking tray and cook for around 10 minutes at 200'C/Gas mark 6
Cool on the tray for a few minutes and then transfer onto a cooling rack
