Fruity ice cream for kids
This is a great way to use seasonal summer fruits...

150g caster sugar
125ml water
450g soft fruit (blackcurrants, strawberries or raspberries)
250ml double cream
Put the sugar and water into a pan and dissolve the sugar over a low heat
Bring to the boil for 3 minutes to make a sugar syrup
Sieve the fruit into a bowl to remove the pips and skin (if you have a food processor, give them a quick blitz first and then sieve them)
Mix the syrup into the fruit puree and allow to cool
In a clean bowl, whisk the cream lightly until thickened but not 'solid' - when the fruit mixture has cooled, add the cream and fold in well until smooth
Pour into a freezer-proof container and freeze for around 2-3 hours until the mixture is starting to freeze around the edges
Take out of the freezer and empty back into the bowl
Beat well, until smooth again, then put back into the freezer-proof container and return to the freezer until frozen
You will need to take this out of the freezer about 5 minutes before serving, to allow it to soften
Will keep for up to 1 month in the freezer
