Easy quiche for kids

Our recipe for an easy spinach and feta quiche, perfect for summer picnics...

  • 1 pack puff pastry (or shortcrust)

  • 4 eggs

  • 150ml milk (or double cream)

  • 75g feta (optional), crumbled

  • 100g spinach (optional), wilted

  1. Preheat oven to 190'C/Gas mark 5

  2. Line an oven proof dish with your homemade or shop bought pastry - ideally a 20-25cm round ceramic flan dish, but the shape isn't too important - leave some pastry hanging over the edge, it helps prevent shrinkage and you can cut it off once cooked

  3. Wilt the spinach (if using) in a pan and set aside to cool - once cooled squeeze out the liquid

  4. In a measuring jug break 4 eggs and whisk

  5. Add enough milk or cream to make up 400ml (if using a 20cm tin) or 500ml (if using a 25cm tin)

  6. Season and add spinach (if using) and pour into the pastry lined dish

  7. Crumble in the feta (if using)

  8. Bake in the oven for 25 minutes - until the egg mixture has set and risen

  9. Leave to cool in tin - can be served hot or cold

You will need

Oven tin - Anything in between 20-25cm will work. We really like this quiche pan that's non-stick and features a loose base for quick release. It's available at Amazon for £9.99.

Tips

If you want to make your own pastry. Kids will love helping you roll out pastry, squeeze out the liquid from the spinach and whisk the eggs.

Variations

Adding things to the quiche that you like: bits of cooked bacon, ham, feta cheese, sweet peppers, sweetcorn, broccoli, fresh herbs, spinach, tomatoes... but it's just as nice plain

For a crisper pastry base, prick the pastry all over with a fork and pre-cook for 10-15 minutes (blind - with no filling) before removing from the oven and adding the fillings, then return to the oven to finish cooking
