Crispy chicken nuggets
Great served with chips and salad...

100g chicken breast (skinless, boneless)
2 eggs, beaten
50g cheese, grated
225g breadcrumbs
Preheat the oven to 200'C/400'F/Gas mark 6
Cut the chicken into nugget sized chunks and dip in the beaten egg
Then dip the chicken into the cheese and then breadcrumbs
Arrange on a non stick baking sheet, drizzle with olive oil and bake in the oven for 20 minutes
Serve the chicken with chips and salad or a jacket potato goes well too

★★★★★ Rated 5 out of 5 stars.Great meal but crap recipe!!! A few tips to make this a genuinely easy enjoyable recipe: 1. You can very slowly toast some bread till hardened and then crush to make your 'breadcrumbs" (discard any blackened bits first!). 2. The chicken bits are best shaped long and thin for ease of handling with little hands. 3. Just mix the grated cheese with the egg and immerse the chicken, the cheese doesn't actually stick to the chicken that well, but it doesn't need to be covered only about 1/3 coverage is still very effective. 4. Then take out and DROP your chicken onto the breadcrumbs, then sprinkle more breadcrumbs on top until you can pat all the breadcrumbs down without getting your fingers damp. THEN put your chicken on the baking paper in the tray. 5. "drizzle"??? ..... pour a thin line of oil along each "nugget". 6. Bake. 20 mins usually good. 7. serve with tomato ketchup, mayonnaise (etc) dips. Your kids will love this meal.
