Cornflake coated crispy chicken air fryer goujons

50g plain flour
1 Knorr Zero Salt Chicken stock cube, crumbled
2 eggs, beaten
100g cornflakes, crushed
4 chicken breasts, cut into strips
2 tbsp olive oil
200g kale
1/4 cucumber, peeled into strips
Put the flour and stock cube into a shallow bowl and mix, put the eggs into another bowl and the cornflakes into a third.
Dunk the chicken breasts into the flour, shaking off any excess, then put into the eggs and finally the cornflakes to create a coating. Repeat with all the chicken then place in the tray of the air fryer.
Cook for 15 mins, turning halfway through, or until the chicken is cooked through and is crispy on the outside.
To serve, massage the oil into the kale leaves and toss through the cucumber. Serve the chicken with salad on the side.
