8-12 falafel
60g plain yoghurt
1 clove garlic, crushed
1 tsp lemon juice
4 large wraps
2-3tbsp hummus
Large handful baby spinach leaves
1 large tomato, diced into small pieces
Small handful alfalfa sprouts/sprouted veg for salads (optional)
Bake the falafel for 12 minutes at 200°C/Fan 180°C/Gas Mark 6, or according to packet instructions.
While the falafel are cooking, whisk together the yoghurt, crushed garlic and lemon juice to make a garlic yoghurt sauce. Season with salt and pepper and put to one side.
Spread the hummus in the middle of each wrap. Top with the spinach leaves, tomatoes and alfalfa sprouts. Place 2-3 falafel in a line down the middle, then drizzle some garlic yoghurt over the top.
Serve as an open wrap, or bring the sides of the wrap into the middle so they are almost touching. Tuck in the bottom and then roll up.
