Halloumi and couscous wraps for kids

Delicious wraps packed with Halloumi cheese, couscous and veggies

  • 100g couscous (plain or lemon and herb flavoured)

  • 125g Halloumi, sliced

  • 1 tsp olive oil

  • 2 large wraps or 4 medium ones

  • 2 tbsp plain yogurt or hummus

  • Small handful rocket leaves

  • 2 roasted red peppers from a jar, sliced

  1. Place the couscous in a bowl. Cover the couscous with just enough boiling water so it is completely covered with a mm or two of water on top (too much water equals soggy couscous). Cover with a plate and leave for 5 minutes.

  2. Meanwhile, add the oil to a large non-stick frying pan over a medium heat. Add the halloumi slices and cook for about 2 minutes on each side -turning as soon as they turn golden. Keep a close eye on the halloumi as it can go from golden to burnt very quickly. Remove from the heat to a plate lined with kitchen paper.

  3. If you are making these wraps for lunchboxes, leave the halloumi and couscous to cool before assembling. If eating straight away, then they are delicious warm. Spread the yoghurt or hummus in the middles of the wraps.

  4. Add a thin layer of couscous on top, leaving a border at the edge of the wrap. Add a couple of halloumi slices, rocket and roasted pepper strips on top of the couscous.

  5. Bring the sides of the wrap into the middle so they are nearly touching. Tuck in the bottom of the wrap, then roll from the bottom upwards. Enjoy the wrap whole, or cut into rounds.
