  • 350g gooseberries

  • elderflower cordial (to taste)

  • 4 tbsp water

  1. Top and tail the gooseberries

  2. Simmer in 4 tablespoons of water

  3. Whizz down with a hand blender

  4. Add elderflower cordial to taste

  5. Freeze

  6. Stir once while freezing

    A really easy to follow recipe , that is perfect for summertime alfresco eating . I find gooseberries a bit too tart , but this works just as well with any type of berry .
