Baked bean curry

This is a good, quick and very healthy meal for all the family...

  • 1 onion, sliced

  • garlic (4x cloves), crushed

  • chilli (to taste), sliced

  • 2 tsp coriander, dried

  • 2 tsp cumin seeds

  • 2 tsp mustard seeds

  • 1 tsp ground ginger

  • 225g cherry tomatoes, sliced

  • 840g baked beans (2x tins)

  • 1 Knorr Zero Salt Vegetable Stock Cube

  1. Put onions, garlic, chillis (to taste), herbs and spices in a pan with a drop of oil, and cook until soft.

  2. Add tomatoes and cook for a few minutes.

  3. Add baked beans and crumble in one Knorr Zero Salt Vegetable stock cube. Cook for a few more minutes until all cooked, hot throughout and well mixed.

  4. Season to taste.

  5. Serve with mashed potato or rice and naan bread, if you like.

    Good recipe. Have done it with both fresh cherry tomatoes and tinned chopped tomatoes and it's much nicer with the tinned. Also think its lovely with mushrooms and peas added in served with mash! Big hit in this family!

    Made this for me and my fiancé when he got home after a long laye shift at work , he didn't fancy anything out of the freezer so I russled this together and he lived it. Defiantly a big hit in this little family :)

    "YUMTASTIC!" (my 3yr old). I added lean mince to mine (i am anaemic and need red meat) and threw some chopped fresh red and green pepper in (had them in the fridge and they needed using) and substituted 2tsps of medium chilli powder instead of the fresh chillis and used low salt, low sugar beans... it was fab! This is definitely a recipe that you can throw whatever you have that needs using into, to save pennies, get their five a day in and keep everyone happy. So easy, cheap, quick and quite healthy if you make sensible low fat, low sugar choices! Thanks!
