Banana flapjacks
Deliciously simple flapjacks made with ripe bananas

150g butter, cubed
3 tsp runny honey
100g brown sugar
3 very ripe bananas
300g porridge oats
Preheat the oven to 180°C/160°C fan/Gas Mark 4. Lightly grease a medium-sized rectangular baking dish.
Melt the butter, honey and brown sugar together in a saucepan over a medium heat, stirring until you have a rich syrup. Remove from the heat.
Mash the ripe bananas together in a bowl.
Fold the oats into the mashed banana, then pour in the butter and honey syrup and stir until everything is well combined.
Spoon the mixture into the baking dish and smooth the top. Bake for 45 minutes, or until golden at the edges.
Leave to cool for five minutes before scoring out your flapjacks with a sharp knife. Leave to cool completely then slice and remove from the dish.

Tips
This is a brilliant recipe for using up overripe bananas that are going black. If you don't want to make the flapjacks right away, you can freeze black bananas so that they are ready for baking when you need them. Just defrost overnight in the fridge or in the microwave.
Get the kids involved with cooking this simple recipe by having them help you weigh and measure the ingredients. They'll love mashing the bananas, too.
The finished flapjacks will keep in an airtight container for a little over a week. You can also freeze them - space them out on a baking tray to freeze, then pop them into a freezer bag or reusable container (this will stop them sticking together). Simply defrost overnight in the fridge for an easy and healthy lunchbox addiiton the next day.
Variations
Adding 1 tbsp of sieved cocoa to the melted butter, to make chocolate and banana flapjacks
This is a versatile recipe, and you can vary the ingredients according to what you fancy, or whatever you have in the kitchen - try adding dried fruit, seeds or chocolate chips.
If you want to get really indulgent, you could even dip half of the bars in melted chocolate, for an easy dessert or cute gift.
For a pretty finish, add slices of dried banana on top.

★☆☆☆☆I followed (very easy) recipe to the letter with the omission of the raisins. Found it very soft though it did hold together well. However as others have said it was very bland and neither of my kids would eat it, despite loving both flapjacks and bananas! Think it needs more syrup and butter, or perhaps chocolate over the top would make it more appetising! I guess if you are looking for a slightly healthier flapjack and your kids aren't too fussy it might be worth a try, but I certainly won't be making it again.
