Baked bean omelette
A very cheap & easy meal using baked beans...

3 eggs
200g baked beans (1/2 a tin)
pepper
1 tbsp butter
Crack the eggs into a bowl, add the baked beans and season to taste - whisk together
Heat some oil in a frying pan, pour in the mixture and swirl to coat the base of the pan
Cook over medium heat for 3 minutes until the sides begin to set and then flip the omelette over
Cook for a further minute and then serve with crusty bread, grilled bacon and grilled tomatoes

Though the kids asked for egg they rarely actually eat, but combining it with baked beans (why hadn't I ever thought of this!?!), I was on to a winner.
