Goulash

1 onion, chopped
1 pepper (red or green), sliced
garlic puree
2 tsp paprika
1 tsp cayenne (optional)
3 carrots, sliced
400g diced beef (or use raw beef chunks)
400g chopped tomatoes
2 tbsp plain flour
2 tbsp tomato puree
500ml beef stock
2 tbsp natural yoghurt (or soured cream)
fresh parsley
2 tbsp oil
Preheat oven to 170'C/Gas mark 3
Fry the onion in about 2 tbsp of oil for 5 minutes
Add the red or green pepper (or both) and cook for 2 minutes
Add 2 good squirts of garlic puree, 2 tsp of paprika, 1 tsp cayenne pepper and mix
Add the carrots and take off the heat (sometimes I add 1-2 potatoes)
Meanwhile, put the diced beef diced in the bottom of a casserole dish (or slow cooker) and sprinkle with 2 tbsp of flour
Add the can of chopped tomatoes, tomato puree and 500ml of beef stock and stir well
Add all the other ingredients from the pan and mix together
Put in the oven for about 1 1/2 hours (or 8 hours in the slow cooker) checking on it and stirring it from time to time
When you take it out, mix in 2 tbsp of natural yoghurt or soured cream, and fresh parsley and serve with rice and crusty bread

Tips
Why not buy a large beef joint for your Sunday dinner and use the leftovers to make goulash on Monday?
If using raw beef, coat in the flour and brown for a couple of minutes before adding to the casserole or slow cooker.
Variations
For a less spicy version, leave out the cayenne if serving to young children
