Chicken cacciatore
An easy family recipe for the slow cooker or crock pot...

1 onion (thinly), sliced
125ml dry white wine (or stock)
10 Kalamata olives (pitted), chopped
flat leaf parsley (or basil), chopped
500g chicken (breasts or thighs), skinned
1.5 tbsp capers
300g plum tomatoes (fresh or tinned), chopped
½ green pepper, sliced
sea salt (to taste)
pepper (to taste)
garlic (2 cloves), crushed
300g pasta (cooked)
Feta (to serve - optional)
Place sliced onion in slow cooker and cover with chicken
In a bowl stir together tomatoes, green pepper, salt, pepper, garlic and white wine - pour over chicken
Cover and cook on Low for 5-6 hours or on High for 3-4 hours, or until chicken is tender
Stir in capers, olives and fresh herbs just before serving
Serve over cooked pasta and crumble some feta on top (optional)
