Basic chutney (slow cooker)

500ml vinegar
500g sugar
1kg cooking apples (peeled, cored and chopped into 2cm pieces)
1 onion (large), finely chopped
1kg fruit (dried fruit and vegetables of your choice, chopped into 2cm pieces)
2 tsp whole spices (of your choice)
1 chilli (optional)
Add the vinegar and sugar to the slow cooker basin and switch on to HIGH
Stir until the sugar has dissolved
Add the chopped apple and onion
Add the chopped fruit and vegetables and stir well
Add the spices and stir again
Put the lid on tightly and cook on HIGH for 5–6 hours or until the chutney is a thick consistency

Variations
Chutney can be made using all sorts of ingredients, so long as they combine to make chutney's distinctive sweet taste. Why not experiment with some of these flavours?

- Mango, onion seed and garlic
- Beetroot, cumin and ginger
- Green tomato and chill

★★★★☆I found that I didn't have space for 500g of veg. I used apples and sultana's then let it simmer down so I could fit the veg in (beetroot and carrot). There was still quite a lot of liquid after 6 hours so I took some out, used it as a marinade on my chicken dinner and let the chutney cook with the lid off for a couple more hours. Very tasty.
