Baked doughnuts
These 10-minute pink baked doughnuts make a tasty fun dessert

Preparation
1 cup of plain flour
1/4 cup of cocoa powder
1/2 cup of granulated sugar
1 tsp baking powder
1/4 tsp salt
3/4 cup of milk
3 tbsp melted butter or coconut oil
1 tsp vanilla extract
For the icing
20g pink chocolate (or use white chocolate with food colouring), melted
Preheat the oven to 200ºC and spray a doughnut pan with non-stick spray
Whisk the flour, cocoa powder, sugar, baking powder and salt in a large bowl
Pour the milk, melted vegan butter and vanilla into the bowl with the dry ingredients
Mix well with a large wooden spoon to combine
Spoon the batter into the doughnut pan, filling it about 3/4 of the way full
Bake for 10-14 minutes or until the doughnuts look set on top. Let cool for 5 mins then carefully transfer to a wire rack
Glaze with melted chocolate by dipping and allowing to cool down
Tips
This recipe works best with a doughnut pan, but if you don't have one, don't worry! You can create your own makeshift pan using a normal muffin tray and some tin foil.
Simply cut or tear your tin foil into squares that are just slightly bigger than the cups in your muffin tray. Around 5" by 5" should work well. Wrap the foil over your finger, then fold the sides up to create a mould. The moulds should fit nicely in the muffin cups and the foil should create a perfect doughtnut-shaped hole.
Variations
This recipe uses melted pink chocolate, but you can create your own using melted white chocolate and food colouring. Go wild with any colour you like! Making these for a birthday or celebration? Choose a food colouring in the favourite colour of your special person.
