1l ice cream, softened
300g cake of choice (swiss roll, maderia cake etc)
100g jam
5 eggs (large - just the whites)
35g caster sugar
Preheat your oven to 230'C (hot!)
Slice the cake and then layer it over the bottom of an ovenproof baking dish, spoon the jam over the top
Remove the ice cream from the tubs in one lump and place them on top of the cake and jam
Firmly press them down/spread so that they fill the space but leave a couple of cm gap so that it doesn't meet the very edge of the dish
Pop this in the freezer for an hour or two so that the ice cream hardens up again
Whisk the egg whites in a large bowl, add a couple of tablespoons of sugar at a time (this helps it keep it's form) until it has stiff peaks
Quickly spoon this meringue over the cake and ice cream and bake in the oven for only about 5 minutes - remove as soon as the meringue starts to brown
Serve immediately
Tip: Buy a sponge flan case and layer your jam, ice-cream and meringue up

Tips
Make sure the meringue totally covers the ice cream, if there are any gaps the heat will get in and melt the ice cream

I created this twist for my Wife's 40th Birthday I created a very light Genoise Sponge for the base, added some sliced rhubarb with apples and ginger I'd cooked down to nearly puree and then layered on a home made Rum (Bacardi Spiced) & Raisin (Soaked in the Bacardi Spice Rum) Ice Cream with vanilla ice cream in five layers them made a very stiff meringue to cover the whole thing and put it in the oven to brown, I finished it with a Blowtorch to add depth of shade to the browning, and served it with flaming Bacardi Spiced Rum with the lights turned off for effect as it's served. It's pretty easy to do youself!!
