Apple cinnamon cake

  • 350g cooking apples

  • 225g self-raising flour

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 115g butter, chopped

  • 115g soft brown sugar

  • 3 tbsp milk

  • 2 tbsp demerara sugar

  • single cream

  • creme fraiche (optional)

  1. Preheat oven to 180'C/Gas mark 4

  2. Lightly grease a 23cm (9in) sandwich tin and line with baking paper

  3. Sift the flour and spices into a bowl and rub in the butter until the mixture resembles fine breadcrumbs

  4. Peel, core and finely chop the apples and mix them with the soft brown sugar

  5. Stir into the flour mixture and beat in enough milk to form a batter

  6. Spoon the mixture into the prepared tin and spread it evenly around the sides

  7. Sprinkle with the demerara sugar to give the cake a crunchy topping

  8. Place in the preheated oven and bake for 40-45 minutes or until firm to the touch

  9. Cut into slices and serve with a little single cream or creme fraiche poured on top

You will need

23cm (9in) flan tin or sandwich tin - This highly durable and non-stick one from MasterClass is just what you need and it's available at Amazon for £7.95.

Muffin tray - If you are making muffins instead of a cake, this non-stick, six-hole one is just perfect and doesn't break the bank either. Find it at Amazon for less than a fiver.

Tips

Batter needs to be soft, not sticky - add more milk if needed

    Mmmmm mmmm mmmm. I loved this cake. It was super easy to make (I used a mandolin to slice my apples), all store cupboard ingredients, and tasted delicious. Best eaten still warm with rich vanilla ice cream. I'm going to adapt it to make muffins next time and freezing some.

    I've made this many, many times - either as a cake or as muffins. I like to make it in a loaf tin, which means its easy to slice for lunch boxes. It also freezes very well, so make lots when you have apples and pop in the freezer. Take it out of the freezer in the evening and it is fine by morning.
