Broccoli tots
Nutritious alternative to chips and ideal for toddlers and baby-led weaning

1 large head of broccoli (around 250g)
75g mature Cheddar, grated
2 spring onions, finely sliced (green and white parts)
40g panko breadcrumbs
1 large egg
1/2 tsp smoked paprika
Small handful flat-leaf parsley, finely chopped
Preheat the oven to 200°C/180°C/Gas Mark 6. Grease the holes of your mini muffin tins with a dab of olive oil.
Trim the end off the broccoli stalk, then slice the rest of the stalk into thin slices, and roughly chop the florets. Steam or boil the broccoli in a saucepan for 3-4 minutes or until just tender. Drain and rinse under cold water.
Add the cooked broccoli to a food processor and pulse briefly until you have large crumb-sized pieces. Alternatively, you can finely chop the broccoli.
Add the broccoli to a large mixing bowl with the other ingredients. Stir with a wooden spoon, then season with salt and pepper (leave the salt out for babies and young children).
Bring together with your hands into a ball of dough. Add a spoonful of dough to each hole of your greased mini muffin tins. Alternatively, shape the dough into small logs or 'tots' and place on a baking tray lined with greaseproof or baking paper.
Bake for 12-15 minutes or until lightly golden. Leave in the tins to cool for 5 minutes before turning out.
Serve with reduced-sugar ketchup.

Tips
Freeze leftover tots on a baking tray lined with greaseproof/baking paper (so they don't all stick together). Once frozen, bag and label them and return to the freezer for up to 2 months.
Variations
Swap the Cheddar for grated Feta and add a tsp of finely chopped mint.
Swap half or all of the broccoli for cauliflower.
Add a handful of wilted baby-leaf spinach.
