Baby's first pancakes
2-ingredient mini pancakes for little eaters – perfect for baby-led weaning

1 very ripe banana
1 large egg
Coconut or vegetable oil, for frying
Mash the banana in a bowl with a fork until smooth.
Whisk the egg into the banana until combined.
Heat a few drops of coconut oil/vegetable oil in a non-stick frying pan over a medium heat.
Add a tablespoon of the banana batter to the pan and swirl with the back of the spoon to make a round pancake. Cook for 2-3 minutes, or until bubbles start to form and the pancake is coming away from the pan at the edges. Flip and cook for a further 1-2 minutes on the other side, until golden and cooked through.
Remove to a plate and repeat until all the pancakes are cooked.
Wait until the pancakes have cooled enough for baby to eat, then serve warm. Store leftover pancakes overnight in the fridge and serve cool the next day.
