Tomato pasta sauce (made with passata)

1 onion, chopped
1 garlic (clove), crushed
1 tbsp tomato puree
500ml passata
1 tsp fresh basil, chopped
1 tsp black pepper
½ tsp sugar
Gently fry the onion and garlic on a low heat for a few minutes, in some olive oil
Add the tomato puree and cook for a further couple of minutes
Add the rest of the ingredients, stir well, then cover the pan and leave to simmer for around 15 minutes
Allow to cool slightly and blend if you prefer a smooth sauce
Serve over pasta and top with grated cheese

Tips
Use this sauce as a base for a meat or vegetarian bolognese, lasagne, chilli etc
Double or even triple the ingredients, make a big batch and freeze it.
Variations
Adding a variety of vegetables such as chopped red pepper, carrot and mushroom to the sauce when you add the passata or tomatoes
Puree the sauce if preferred to hide the vegetables from fussy children and use as above

I add a courgette, about 6 mushrooms & about 4 medium carrots & use 3 tins of chopped tomatoes. Then I freeze into portions & defrost over night when needed, it's great with just pasta or mixed with mince & spaghetti for a simple spaghetti bolognese.
