Easy pancake recipe for kids
This classic and easy pancake recipe for kids is perfect for Pancake Day, or whenever you fancy a tasty treat! Makes approximately 12 crêpe pancakes.

110g plain flour
Salt (just a pinch)
Sugar (just a pinch)
2 eggs (use 1 whole egg and one yolk)
284ml milk (1/2 a pint)
2 tbsp olive oil (or butter)
Sift the plain flour into a mixing bowl, add a pinch of salt and a pinch of sugar, then make a small well in the middle.
Crack one egg into it the well and then add the yolk from the other egg.
Add a little milk and stir gently.
Keep adding the rest of the milk and stir/whisk until smooth.
Now add the oil/butter and beat for a good minute.
Leave to rest.
When you are ready to make your pancakes, heat a little oil or butter in a frying pan. When it's hot, add about three tablespoons of the batter you've already made.
Leave to cook for about a minute, then when the mixture becomes firm, flip and then cook the other side.
Serve with your favourite toppings (see below for some suggestions!).

Tips
This easy pancake recipe is perfect for getting the kids involved in baking on Pancake Day. The batter makes approximately 12 pancakes.
If you have time, it's best to make the pancake batter in advance and leave it to rest before cooking your pancakes, ideally in the fridge overnight (though even just 15-30 minutes of resting will help!).
And when they taste so good, why eat them just on Pancake Day? They are perfect for breakfast all year round, and you can even freeze them if you've got too much batter.
Once they've cooled off, you can store them in the freezer for up to 2 months by sandwiching each pancake between baking paper, and then wrapping the stack in clingfilm.
Kids will love helping you stir all the ingredients together, and older kids can even have a go at flipping the pancakes!
Try putting out a few different toppings, and letting the kids have fun putting their pancakes together. They could even decorate them with funny faces or other designs, if you have a stencil or two.
Or keep it simple and serve your pancakes with a squeeze of lemon and a drizzle of honey - delicious!
Variations

If you want the pancakes themselves to be sweeter, you can up the amount of sugar you add to the mixture.
