Frog soup

A green soup - hence the fun name! Filled with veggie goodness...

  • 1 tbsp vegetable oil

  • 1 leek (medium)

  • 1 stick celery (medium)

  • 225g potato, diced

  • 1l stock made using 2 Knorr Zero Salt Vegetable Stock Cubes

  • 280g petit pois (frozen - plus extra to garnish - optional)

  • cheddar cheese (to garnish - optional), grated

  1. Heat the oil in a large saucepan

  2. Add the leek and fry over a medium heat for 5 minutes until softened

  3. Add the celery and potato and cook for a further 5 minutes

  4. Pour the Knorr Zero Salt Vegetable stock over the vegetables and bring to the boil

  5. Cover, reduce the heat and simmer the soup for 15 minutes

  6. Add the petits pois and cook for a further 5 minutes until the potato is tender

  7. Using a hand-blender or food processor, blend the soup until smooth

  8. Reheat if necessary before serving and top with petit pois or grated cheddar cheese, whichever you prefer

Tips

This soup doesn't contain real frogs of course, but the soup is green so it's a nice way to tempt fussy eaters to give it a go! Filled with green goodness from the leeks and petit pois, this soup is quick and easy to whip up.
