Heat coconut oil to sizzling hot and cook chicken cakes on medium heat for 5–7 minutes on each side
Serve with fresh cucumber, Thai basil and a spicy dipping sauce on the side
You will need
1x mixing bowl
Tips
This recipe makes 12-14 cakes. Why not make them as part of an Asian-inspired dinner party or as a main dish with sautéed greens and cucumber salad?
Cooked cakes will last for 2-3 days in the fridge and for up to a month in the freezer.
Variations
You can use the same recipe for pork and beef mince instead of chicken.
These cakes can also be added to curry sauces and broken into chunks for Asian omelettes.

★★★★☆This makes a lovely change from the usual fish cake , but is made in relatively the same way . These also stay very moist , I was a little worried that they would dry out during cooking.
