Apricot tart
This flan is nice and easy to make - even easier if you opt for ready-made pastry...

For the pastry
115g plain flour
50g butter
25g caster sugar
2 eggs (just the yolks)
For the topping
25g ground almonds
8 apricots (and stoned or a tin of drained apricots), halved
2 eggs
25g sugar
200ml creme fraiche
1 tsp vanilla essence
Mix the pastry ingredients together either in a food processor or by hand until they form a ball - chill for 30 minutes
Preheat oven 200'C/Gas mark 6
Roll out the pastry to line your flan tin - if the pastry is too crumbly to roll then slice it with a knife and line the tin with the slices and push the slices together until the whole tin is lined
Prick the base and sides and bake in a preheated oven for around 10-15 minutes or until the base is firm
Sprinkle the almonds onto the base and lay the apricots on top, cut side down
Beat together the sugar, eggs, creme fraiche and vanilla essence
Pour over the apricots and sprinkle the top with a little extra sugar
Turn up the preheated oven to 220'C/Gas mark 7 and bake the tart for 25 minutes or golden brown
Serve warm or cold with creme fraiche, custard or single cream
