Apple, yoghurt and berry ice lollies
Healthy homemade lollies packed with berries and fruit

4 apples
2 tbsp lemon juice
100ml water
100g caster sugar
500g greek yoghurt
1 small handful of strawberries
1 small handful of blueberries
Peel, core and chop the apples
Put in a saucepan with the water, lemon juice and sugar
Cover and simmer, stirring occasionally for 15 minutes or until the apples are soft - set aside to cool
Put the mixture into a food processor and blend until smooth
Fold in the yoghurt
Slice the tops off the strawberries and cut them into slices. Fold the strawberry slices and blueberries into the apple and yoghurt mixture.
Pour the mixture into ice lolly moulds and freeze for 6-8 hours until solid

Tips
The recipe makes about 6 lollies, depending on the size of your moulds
Use old yoghurt cartons with lolly sticks stuck into the middle of the yoghurt mix, for a DIY lolly mould.
If making these lollies for kids under 5, be sure to cut the blueberries in half, to reduce the risk of choking.

★★★★☆I've made these with plain homemade yogurt and different combinations of fruit. The only reason I'm giving this recipe a 4 star rating is because of the sugar. Add a bit of vanilla and some cinnamon, and you can have a nice amount of sweetness with little or no sugar. You can also use ripe (or overripe) bananas to eliminate the need for added sugar. This is a great recipe for those rare hot summer days.
