75g pasta (per person)
2 tbsp vegetable oil
1 chicken breast (per person, cut into strips)
1 tsp crushed garlic
white wine (or chicken stock)
1 tbsp half fat creme fraiche (per person)
100g Parmesan (optional), grated
2 tbsp parsley, chopped
salt (to season)
freshly ground black pepper (to season)
Cook the pasta in boiling salted water according to the packet instructions
While the pasta is cooking heat the oil in a frying pan and stir fry the chicken until cooked through and golden
Add in the garlic and stir for 30 seconds
Add a good glug of white wine (or chicken stock) and allow to bubble down
Add the crème fraîche and stir to heat up
Add the pasta, Parmesan and parsley and toss together over the heat - season well
