Heart-shaped jammy biscuits
These easy jam heart biscuits are perfect for baking with kids for Valentine’s Day or giving to mum on Mother’s Day...

250g butter (at room temperature)
100g caster sugar
1 lemon (for its zest), grated
350g plain flour
2 tbsp milk
100g raspberry jam (seedless)
icing sugar (to dust)
Cream the softened butter, caster sugar and lemon zest until light and fluffy
Sieve in the flour and add the milk
Bring the dough together with your hands into a ball
Wrap the dough in cling-film and chill for 30 minutes
In the meantime, line a couple of baking trays with baking paper and preheat the oven to 180'C/Gas mark 4
Sprinkle some extra flour onto a board and roll out half of the dough until it is 3mm in thickness
Using the large heart-shaped cutter, cut out as many biscuits as you can
Squeeze any leftover dough back into a ball, roll and cut out some more hearts
Take the second half of dough, cut out some more heart shapes and this time, cut smaller hearts in the middle of the larger hearts
Repeat until all the dough is used
Transfer the biscuits onto the lined tray and bake, in two batches, if necessary, for 12 minutes
Once they are a light golden colour (they should be soft to the touch) take them out and put them on a wire rack to cool
When cool, spread jam onto the whole biscuit shapes and place a cut-out heart shape on top, pressing down gently
Dust with icing sugar if you like

Tips
Children love making biscuits and cookies, including rolling the dough, cutting out the shapes, and in the case of these biscuits, adding the jam filling, too. Put them in a pretty box lined with tissue paper and give them as a gift for Valentine’s Day or Mother’s Day.

If you want your biscuits to look extra special, add heart-shaped cake sprinkles and edible glitter to the jammy section.
Making thumbprint heart cookies without a cookie cutter
If you don't have two heart-shaped cookie cutters, use a round cutter to make the biscuit shape and a small heart cutter to create the shape in the middle - a bit like a homemade Jammie Dodger. Your heart jam cookies will still look cute!
Shortbread heart cookies with jam
This is a shortbread-style recipe for heart jam cookies, and you can easily adapt it for other times of the year and special occasions. You could use star-shaped cookie cutters or Christmas tree-shaped cutters for a Christmas biscuit for example.
This recipe makes about 24 biscuits/12 sandwiched together.

Variations
Strawberry jam cookies and other versions
While this recipe uses raspberry jam, you can make strawberry jam cookies, blackcurrant cookies, lemon curd cookies, or any other jam thumbprints cookies variety you like.
These cookies have a very light lemony flavour. If you don't have a lemon, you can leave it out and they'll taste just as good. You could also add a drop of vanilla essence for a slightly sweeter flavour.
Chocolate love heart jam cookies
To give your heart jam cookies a chocolately twist, replace the jam with a chocolate spread such as Nutella.
If you want to make your cookies vegan, replace the butter with a plant-based spread and use plant milk instead of cow's milk.
To make this recipe gluten-free use a gluten-free plain flour.
